Bulgur with Tomatoes
Ingredients
- 3 cups coarse bulgur, washed and drained.
- 2 tomatoes, peeled and chopped.
- 4 tbsp tomato paste mixed with 1 cup water.
- 3 large onions, chopped.
- 9 tbsp olive oil.
- 1 tsp salt.
- 1 tsp black pepper.
- 1 tsp white pepper.
Preparation Method
- Heat 4 tbsp olive oil in a pot and sauté the onion until golden.
- Add the bulgur, mix it with the onion and oil, and stir for a few minutes.
- Add the chopped tomatoes, tomato paste mixture, black pepper, white pepper, and salt, then pour in 3 cups of water.
- Bring the mixture to a boil, then cook over low heat for 20 minutes until the bulgur is tender. Add more water if needed.
- Turn off the heat and let the tomato bulgur rest in the pot for 10 minutes.
- Add the remaining olive oil, about 5 tbsp, and mix well.
- Serve the bulgur hot, with yogurt on the side.
