Burbara (Saint Barbara)

Recipe:

  • 2 cups of crushed peeled or shelled wheat (pearl barley)
  • 8 cups of cold water
  • 1 cup of golden raisins
  • 2/3 cup of crushed walnuts,
  • ½ cup of slivered almonds
  • 2 tablespoons of ground fennel
  • 2 tablespoons of ground anise
  • 1 tablespoon ground cinnamon
  • ½ teaspoon of ground nutmeg
  • 1 cup of sugar
  • Decorate with pine nuts and sugar coated fennel seeds

Directions:

  • Wash wheat and soak over night
  • Drain and add 8 cups of water
  • Boil water until wheat is tender, (be sure to mix every few minutes)
  • Then add the spices and sugar
  • Add the raisins, walnuts and almonds to the boiling mix
  • Boil for 10 more minutes, then turn off the stove
  • Served hot or cold
  • Optional: Decorate with pine nuts or sugar coated fennel seeds
